每逢新年,象徵年年有餘的魚餚,是席間不可或缺的菜式。傳統來說,中國人吃魚講求完整,代表有頭有尾,萬事圓滿。魚亦有豐收的意思。新年期間,親朋好友互相祝福「年年有餘」,寓意全年豐收,有富餘。

蹦蹦跳的活魚,整尾以清蒸、上湯浸、乾煎的方法烹調,已經鮮味無比。為了你和家人吃得更健康,我們建議以清淡為佳,少油烹調以及吃魚時沾低鹽醬油。無論你用什麼烹調方法,使用新鮮配料,例如姜和蔥,就可帶出魚的鮮味。
